Goya Champuru /  Stir Fried Bitter Melon with pork and tofu

Pancake mix:

1 Fresh Bitter Melon or 1 tin of Bitter Melon in Brine
300g   Tofu or Moringa Firm Tofu cut into 15mm slices
300g   Fresh pork loin (thinly sliced) or you can use Luncheon Meat ( thinly sliced into pieces)
2 Eggs, Slightly beaten
2 Cooking Oil
1 tsp Soy Sauce
1 tsp Salt
1 tsp Sesame oil
1 tsp Sugar

Method

Step 1. To prepare the fresh bitter melon, split it in half lengthways and scrape out the seeds with a spoon, slice it into thin slices then place them into a plastic bag with 1 tsp of salt, shake vigorously for 3-4 minutes, wash and drain then set aside.
Step 2. Heat the pan and add 2 tsp of oil. When the pan is hot, add the pork and cook for 1 minute. Then add the Bitter Melon and stir fry it with the pork. Add a little water and cover the pan with a lid and let it simmer until the bitter melon becomes soft. Put it onto a dish and set aside.
Step 3. Pan fry the tofu with some oil on both sides until it turns golden brown. Add the cooked bitter melon and pork back into the pan with the tofu. Season with 1 tsp of soy sauce, salt, sesame oil and sugar and let the tofu absorb the sauce for 2 minutes. Do not over-mix, tofu is easy to break.
Step 4. Lastly, add the beaten eggs into the pan and gently simmer for two minutes with the lid on. Ready to serve.
Step 3. Sprinkle the spring onions and Ready to serve.
