Ingredients:
- 1 pack enoki mushrooms
- 250g thinly sliced beef
- 1 tbsp oil
- 1 spring onion, finely sliced (for garnish)
- Toasted sesame seeds (optional, for garnish)
Sauce:
- 3 tbsp light soy sauce
- 1 tbsp mirin
- 3 tbsp water
- 2 tsp sugar
- 1 clove garlic, minced

Method:
- Trim the enoki mushrooms and separate into small bundles.
- Roll it up! Wrap each bundle with a slice of beef.
- Sauce time: Mix soy sauce, mirin, water, sugar & garlic.
- Sear the rolls seam-side down in oil, browning all sides.
- Simmer in sauce for 2–3 mins until glossy and cooked through.
- Serve hot with spring onion & sesame garnish.
