How to Use FRESH Enoki Mushrooms

Preparation:

1. Rinse the mushrooms gently under cold water.
2. Trim the root ends.
3. Separate the clusters into smaller bunches.

Short Recipes:

1. Enoki Mushroom Soup:

   • Ingredients: 100g Enoki mushrooms, 4 cups chicken or vegetable broth, 1 clove garlic (minced), 1 tbsp soy sauce, 1 green onion (sliced).
   • Instructions:
     1. Bring the broth to a boil in a pot.
     2. Add garlic and soy sauce.
     3. Add Enoki mushrooms and simmer for 5 minutes.
     4. Garnish with green onion before serving.

2. Enoki Mushroom Stir-Fry:

   • Ingredients: 100g Enoki mushrooms, 1 bell pepper (sliced), 1 carrot (julienned), 2 tbsp soy sauce, 1 tbsp sesame oil, 1 tsp ginger (grated).
   • Instructions:
     1. Heat sesame oil in a pan over medium heat.
     2. Add ginger and stir-fry for 1 minute.
     3. Add bell pepper and carrot, stir-fry for 3-4 minutes.
     4. Add Enoki mushrooms and soy sauce, cook for another 2 minutes.

3. Enoki Mushroom Salad:

   • Ingredients: 100g Enoki mushrooms, 1 cucumber (sliced), 1 tbsp rice vinegar, 1 tsp sesame oil, 1 tsp soy sauce, sesame seeds for garnish.
   • Instructions:
     1. Blanch Enoki mushrooms in boiling water for 1 minute, then drain.
     2. Mix rice vinegar, sesame oil, and soy sauce in a bowl.
     3. Toss the mushrooms and cucumber in the dressing.
     4. Garnish with sesame seeds before serving.
