  • 300g thinly sliced beef
  • 300g thinly sliced lamb or pork
  • 200g prawns
  • 200g fish balls or seafood balls
  • 200g firm tofu, sliced

Vegetables

  • 1 head napa cabbage, chopped
  • 200g mushrooms (shiitake, oyster, or enoki)
  • 1 bunch pak choi
  • 1 carrot, sliced
  • 1 corn on the cob, cut into chunks
  • 2 spring onions, sliced

Dipping Sauces

Optional Sauce Bar Toppings

  • Chopped coriander
  • Garlic, minced
  • Chilli oil
  • Sesame oil
  • Sesame seeds
  • Spring onions

Instructions

Step 1: Prepare the Soup

  1. Pour 2-2.5 litres of water into a large hot pot or deep saucepan.
  2. Add your chosen Haidilao soup base and bring to a gentle boil.
  3. Reduce to a simmer and allow the flavours to develop for 10 minutes.

Step 2: Prepare the Ingredients

  1. Arrange the sweet potato noodles, wet vermicelli, tofu skin, and bean curd rolls on serving plates.
  2. Wash and prepare all vegetables.
  3. Slice meats thinly and arrange alongside seafood and tofu.

Step 3: Make the Dipping Station

  1. Place the Haidilao Peanut Sesame Sauce, Original Dipping Sauce, and Spicy Dipping Sauce into separate bowls.
  2. Let everyone customise their own sauce with garlic, spring onions, sesame oil, and chilli oil.

Step 4: Cook and Enjoy

  1. Bring the soup back to a gentle boil.
  2. Add vegetables, tofu skin, and bean curd rolls first.
  3. Cook meats and seafood in batches until just cooked through.
  4. Add the sweet potato noodles and vermicelli towards the end and cook for 2-4 minutes until tender.
  5. Dip cooked ingredients into your favourite sauce and enjoy straight from the pot.

The best part of hot pot is mixing and matching flavours. Try cooking the sweet potato noodles in the spicy broth for maximum flavour, then dip them into the peanut sesame sauce for a rich, creamy contrast. Don't forget to save some broth at the end.
