Japanese Sansho pepper, though called pepper, is little related to the family of black peppers despite the berry-like similarity in appearance. Sansho pepper is botanically known by the name ‘zanthoxylum piperitum’, and is mostly found in Japan, Korea and China. In Japanese cuisines, sansho pepper is used as a flavour balancer especially to reduce the influence of fat.
