Patak's Madras Spice Paste is custom-prepared for the famous Chicken Madras dish. This unique recipe is named after the South-Indian metropolitan city Madras (now Chennai) where this dish was very popular. This spice paste is a tomato-based variant of many methods by which Madras chicken dish can be prepared. Along with tomato, the curry paste deliciously blends the coriander, cumin, turmeric and chilli spices.

Chicken Madras Recipe:
Step 1: Heat 2 tbsp vegetable oil and fry 125g diced onions in a pan for 3 minutes.
Step 2: Add 3tbsp Patak's Madras Spice Paste into the pan and continue to fry for 2 minutes more.
Step 3: Add 250g chopped tomatoes and cook for 5 minutes.
Step 4: Add 450g diced chicken and cook for 15-20 minutes, adding water as necessary if the sauce is too thick.
Step 5: Add 2 tbsp yogurt, a little salt and 2 tbsp chopped coriander.Cook for another 5 minutes or until the chicken is tender and cooked through.
Serve hot, with Patak's Raita and Naan."
