1 carrot
½ cucumber
1 tbsp white vinegar
1 tsp salt
For the chicken marinade:
300g cooked chicken breast or thigh, sliced
1 tbsp fish sauce
1 tbsp soy sauce
1 tsp sesame seeds
1 clove garlic, grated
1 scallion, chopped
1 tsp rice vinegar
½ tsp sesame oil
1 tsp grated ginger
1 tsp sugar
For the sandwich:
1 fresh baguette
2 tbsp pâté
2 tbsp mayonnaise
Marinated chicken
Pickled veggies
Fresh coriander
For the lunch box sides:
A handful of strawberries
A handful of grapes
A few almonds
Fish shaped crackers
Mini egg rolls
Instructions
Step 1. Pickle the veggies
Toss shredded radish, carrot, and cucumber with vinegar and salt. Set aside to marinate.
Step 2. Marinate the chicken
Mix cooked chicken with fish sauce, soy sauce, sesame seeds, garlic, scallions, rice vinegar, sesame oil, ginger, and sugar until well coated.
Step 3. Assemble the sandwich
Slice the baguette in half. Spread pâté on one side and mayonnaise on the other. Layer with marinated chicken, pickled veggies, and fresh coriander. Cut in half to fit neatly in the lunch box.
