Instructions: 

Step 1. Cook the Noodles 
Cook the noodles according to package instructions. Drain and set aside in serving bowls.

Step 2. Prepare the Sauce
Add minced garlic, chopped scallions, chilli flakes, toasted sesame seeds, and fresh coriander.

Step 3. Make the Chilli Oil 
1.    Heat the oil in a small pan until shimmering and just starting to smoke. 
2.    Carefully pour the hot oil directly over the chilli flakes, garlic, and spring onions on the noodles. You should hear a satisfying sizzle!

Step 4. Season and Toss 
1.    Drizzle soy sauce and black vinegar over the noodles. 
2.    Sprinkle fresh coriander if desired. 
3.    Toss everything together until the noodles are evenly coated in the fragrant, spicy sauce.

Step 5. Serve
