Japanese Sesame Noodle Salad Recipe

Ingredients

1 packet of ramen noodles ( 120g)

Cucumber – Approx 8cm piece, Deseeded and thinly julienned ( 55g)

Cherry Tomatoes – 12 sliced in half

Baby Gem Lettuce – 5 pieces of leaves, finely sliced (30g)

Fueru Wakame – 2 tsp, rehydrated in water for 5mins and then finely sliced
Salad Dressing:
- 2 tbsp of White Roasted Sesame Seeds
- 1 tbsp of Soy Sauce
- 1 tbsp Korean Apple Vinegar
- 1 tsp of sugar
- 2 tbsp of Japanese Kewpie Mayonnaise
- 1 tsp of Japanese Sesame Oil
Method
- Step 1: In a pot, bring some water to a boil and cook the ramen noodles as indicated on the packet. Usually 3-5mins. Once cooked, pour the noodles through a sieve and rinse under cold tap water for 3 to 4 mins and set aside.
- Step 2:In a pestle and mortar, add the roasted sesame seeds and grind until it is like a powder. Around 2mins. Transfer this to a bowl and add all the other salad dressing ingredients to make a sauce. Mix well.
- Step 3:In a large bowl, add the cucumber, cherry tomatoes, baby gem lettuce, wakame and the cooked ramen noodles. Pour the sauce over the salad and mix well using tongs. Ready to eat.
