A quick, sweet-savoury Korean BBQ dish with crisp lettuce, sticky beef, rice, and sesame garnish. It’s ideal for summer because it cooks fast and feels fresh rather than heavy.
Mix the soy sauce, bulgogi marinade, sesame oil, gochujang, sugar, garlic, and ginger in a bowl.
Add the beef, onion, and spring onion, then coat well. Marinate for at least 30 minutes, or up to overnight for deeper flavour.
Heat a pan or grill over high heat and cook the beef in batches until caramelised and just cooked through.
Warm the rice and prepare the lettuce leaves.
To serve, spoon a little rice into each lettuce leaf, top with bulgogi beef, kimchi, and sesame seeds. Add extra gochujang or ssamjang if you want more heat.
