Recipes: Kimchi Fried Rice: Ingredients: 1 cup cooked rice 1/2 cup FRESH Chongga Mat Kimchi, chopped 2 tbsp vegetable oil 1/4 cup diced onion 1 clove garlic, minced 1/2 cup diced vegetables (carrots, peas, bell peppers) 1 tbsp soy sauce 1 tsp sesame oil 2 eggs Green onions and sesame seeds for garnish Instructions: Heat oil in a pan over medium heat. Sauté onion and garlic until translucent. Add diced vegetables and cook until tender. Stir in the kimchi and cook for another minute. Add the rice, soy sauce, and sesame oil, mixing well. Push the rice to one side of the pan and crack the eggs on the other side. Scramble the eggs and then mix into the rice. Serve garnished with green onions and sesame seeds. Kimchi Stew (Kimchi Jjigae): Ingredients: 1/2 cup FRESH Chongga Mat Kimchi 2 cups water or stock 200g tofu, cubed 1/2 onion, sliced 100g pork belly or canned tuna (optional) 1 tbsp gochujang (Korean red pepper paste) 1 tsp soy sauce 1 tsp sugar 1 green onion, chopped Instructions: In a pot, combine kimchi, water or stock, onion, and pork belly or tuna. Bring to a boil, then reduce heat and simmer for 20 minutes. Add tofu, gochujang, soy sauce, and sugar. Simmer for an additional 10 minutes. Garnish with green onion before serving.
