
Step into a vibrant, fun back-to-school lunch with this Onigirazu Lunch Box.
Soft, seasoned sushi rice meets creamy avocado, juicy tomato, and savoury ham, all neatly folded in crisp nori. Finished with a sprinkle of furikake and paired with fresh fruit and sweet treats, it’s a balanced, playful meal that’s as delightful to look at as it is to eat.
Ingredients (makes 2 onigirazu):

300g cooked sushi rice

1 tbsp sushi vinegar

1 tsp sugar

1 tsp salt

2 sheets nori

½ avocado, sliced

4 slices tomato
-
2 slices ham
-
Furikake, for garnish

Optional sides: banana, kiwi, strawberries, Baumkuchen slice, panda cookies
Instructions
Step 1. Season the rice
In a bowl, mix the warm sushi rice with red sushi vinegar, sugar, and salt. Set aside to cool slightly.
Step 2. Prep the nori
Take one sheet of nori and cut halfway from the edge to the centre.
Step 3. Add the fillings
Place the seasoned rice in the top left quarter, avocado slices in the top right, tomato in the bottom right, and ham in the bottom left.
Step 4. Fold & slice
Fold each quarter neatly over the other, press gently to seal, then slice in half to reveal the layered filling. Repeat with the second sheet.
Step 5. Pack & serve
Sprinkle furikake over the onigirazu, then pack into a lunch box. Add fresh banana, kiwi, strawberries, a slice of Baumkuchen cake, and a few panda cookies for a playful, balanced finish.
