Lemon Ice Cream Slice Recipe

Serves 9 people
Ingredients:
- 18 vegan rectangular biscuits
- 2 cans Nature's Charm Coconut whipping cream (refrigerated overnight)
- 1 can Nature's Charm Sweetened Condensed Coconut Milk
- 1½ lemons (juice and grated rind)
- 1½ tsp vanilla extract

- Step 1: Find a baking tin or dish that will sit 9 biscuits evenly and snug. Line with baking paper and lay 9 of the biscuits face down in the tin, evenly spaced.
- Step 2: Add the Nature's Charm Coconut Whipping Cream, Nature's Charm Sweetened Condensed Coconut Milk, the juice and rind of the lemon and vanilla extract to a food processor.
- Step 3: Process until smooth and creamy.
- Step 4: Very carefully pour the mixture into the tin and smooth out on top.
- Step 5: Lay the remaining 9 biscuits on top, face upto mirror the bottom layer of biscuits. Gently press down a little to secure them.
- Step 6: Carefully transfer the tin to the freezer and allow to set overnight.
- Step 7: Remove the slice from the freezer about 15 minutes prior to serving. Cut into 9 even slices and serve!
