Ha Gao is a Chinese inspired Vietnamese dim sum dumpling dish. It is also spelt Hagou or Har Gow. Here you find Vietnamese brand Vinh Thuan’s 400g packet of flour ideal to make traditional Hagou dumplings. The Hagou flour is composed of 85% rice flour and the rest tapioca starch. How to use?	For the best results, cook directly from scratch using this traditional stovetop dough method. [1, 2] 1. Prepare the Filling Finely chop lean pork, shrimp, shallots, and garlic. Season to taste with salt, sugar, sesame oil, and white pepper, then mix thoroughly and set aside. 2. Make the Dough Reserve Flour: Open the 400g pack and set aside 3 tablespoons of dry flour to use later for dusting your workspace. Mix: Dissolve the remaining flour completely into 500ml of cold water in a saucepan. Thicken: Place the saucepan over low heat ("dim fire"). Stir continuously until the batter cooked-thickens and becomes partially translucent. Knead: Remove from heat, immediately add 2 tablespoons of cooking oil, and knead vigorously until the dough turns perfectly smooth, uniform, and fine. Rest: Divide the warm dough into small balls, place them on a tray dusted with your reserved dry flour, and cover with a damp cloth to keep them from drying out. 3. Assemble and Steam Dust your rolling pin and surface with dry flour. Flatten each ball into a thin, round circle. Place a small spoonful of filling in the center, fold over, pleat tightly, and press to seal. Lightly coat your steamer insert with cooking oil to prevent sticking. Arrange the dumplings inside and steam over boiling water for 5 to 7 minutes until the wrappers turn beautifully clear and plump. Serve hot with soy sauce or black vinegar.
