Curry leaves are used as a spice, seasoning, or a flavour enhancer mostly in Indian cuisine. Curry leaves are the leaves obtained from the curry tree, the botanical name of which is ‘Murraya koenigii’. Almost all Indian curry dishes and Sri Lankan dishes do not get complete without the addition of a few curry leaves. Curry leaves are used fresh in curry recipes, and fried in stir-fry recipes.
