The colloquial name for this preserved vegetable dish is ‘Yuquan Muer Zhacai’. Zhacai, alternatively spelt, Cha tsai, and is easily interpreted as ‘Sichuan preserved vegetable’. The basic ingredient of a Zha cai is ‘Chinese mustard’. This particular variety has black fungus as an additional base ingredient.
