China the Cookbook, is an excellent recipe book compiled by Kei Lum Chan and Debora Fong Chan. The book is a magnificent insight into the history of Chinese cuisine. Hundreds of Chinese regional recipes are listed in the book and are detailed with great photographs. The book altogether has a beautiful design. The book also contains sections of cooking techniques, history and utensils.
