For best results, thaw the belt fish before cooking:
Refrigerator Method : Place the sealed package in the refrigerator and allow it to thaw overnight.
Cold Water Method : If short on time, submerge the sealed package in cold water for 1–2 hours until thawed.
Note : Avoid using hot water or microwaving to thaw, as this can affect the texture and quality of the fish.
Cooking Methods
Once thawed, belt fish can be prepared using various methods:
1. Pan-Frying
Pan-frying is a popular method that yields crispy skin and tender flesh.
Preparation :
Clean the fish and remove any remaining scales.
Marinate with ingredients like Shaoxing wine, salt, white pepper, scallions, and ginger for at least 30 minutes.
Lightly coat the fish pieces with cornstarch or a mixture of flour and cornstarch.
Cooking :
Heat a neutral oil (e.g., vegetable or canola) in a skillet over medium-high heat.
Place the fish pieces in the pan, ensuring not to overcrowd.
Fry each side for 3–4 minutes until golden brown and cooked through.
Remove and drain on paper towels.
2. Steaming
Steaming preserves the delicate flavor of belt fish.
Preparation :
Place cleaned fish on a steaming plate.
Top with crushed garlic, grated ginger, sliced scallions, and crushed red pepper.

3. Broiling
Broiling gives the fish a lightly charred exterior.
Preparation :
Preheat the broiler and line a baking sheet with aluminum foil.
Season the fish with salt, pepper, garlic powder, and onion powder.
Optionally, add a pat of butter on top.
Cooking :
Broil the fish for about 4 minutes per side, or until opaque throughout.
Let it rest for 2 minutes before serving.
Storage Instructions
Before Opening : Keep the product frozen at -18°C or below.
After Opening : If you have unused portions, store them in an airtight container and keep frozen.
Note : Do not refreeze once thawed to maintain quality and safety.
