Dried persimmon is a traditional candied fruit snack popular in China, Korea and Japan. Persimmon is a fruit of a tree variety called ‘Diospyros kaki’. Dried persimmon fruits are called ‘shibing’ in China. As per the Chinese method, persimmon fruits are peeled and wind-dried during the autumn season. The sugar content of the fruits is crystalised during the drying process which gives this snack a white colour and a sweet flavour. Japan and Korea follow a slightly different drying process.
