Jajangmyeon - noodles in black bean sauce

Ingredients

Dipping Sauce:

4 Tbsp Vegetable oil for frying
3 Tbsp Sweet bean paste
3 Tbsp Soy bean paste
1 Tbsp Chilli powder (optional)
1 Tbsp White sugar
300g Pork belly (washed and chopped into dices)
1 Cucumber (finely chopped into dices)
1 Fresh minced ginger
1 Onion (peeled, finely chopped into dices)
1 Potato (peeled, finely chopped into dices)
1 Carrot (peeled, finely chopped into dices)
1 tsp Light soy sauce
1 pack Ramen
   

Decoration

50g Green peas / Young Bean sprouts
1 Cooked Quails Egg (cut in half)
1 small Cucumber ( finely sliced )
1 PINCH of Roasted Sesame Seeds

Method

 

Sauce Preparation :
Step 1. Add two tablespoons of oil into a pan and set the stove setting on medium heat. Add three tablespoons of Sweet bean Paste, three tablespoons of Soy bean paste(if you like spicy, you can also add one table spoon of chilli powder), two tablespoon of water, one tablespoon of white sugar, stir fry for five minutes, then put into a bowl and set aside.
Step 2. Heat two tablespoon of oil in a pan and add the diced pork and stir fry for a minute.
Step 3. Then, add minced ginger and diced onion. Stir fry until the onion is soft.
Step 4. Pour out the excess oil in the pot and then add the diced potatoes and carrots. Stir fry for a 1 minute and then add half a cup of water. Cover the pan with a lid for 30 second to allow the potatoes and carrots to cook.
Step 5. Open the lid, add one teaspoon of light soy sauce and stir fry all the vegetables until they are cooked.
Step 6. Add in the sauce mixture which was made in step 1. Use low to medium heat setting, mix the sauce and vegetables together well then simmer slowly for another 5 minutes then set aside.

 

Noodle Preparation :
Step 1. 1. Put noodle into a bowl of boiling water, cook for 2 minutes, stir well then rinse the noodles in cold water and drain. Put them into a serving bowl/plate.

 

Finally Put the sauce on top of the noodle, add some green peas or young bean sprouts as decoration then it is ready to serve.
