Kimchi is synonymous with Korean cuisine. Kimchi is a fermented and pickled vegetable dish, made primarily using Chinese napa cabbage and radish. Though the ingredients are vegetables, kimchi dishes may not be necessarily vegetarian or vegan, as they contain shrimp and anchovy as flavouring ingredients.
