Ingredients
For the Fried Rice
- 2 cloves garlic, finely chopped
- 2cm piece fresh ginger, finely chopped
- 2 banana shallots, finely chopped
- 300g cooked jasmine rice
- 2 eggs, beaten
- 80g raw peeled and deveined prawns
- 1 scallion, finely chopped, optional
- 1 red chilli, finely chopped, optional
- 2 tbsp cooking oil
Seasonings
- 2 tbsp soy sauce
- 1 tsp sesame oil
- ¼ tsp white pepper
- 1 tbsp oyster sauce
- ½ tsp mushroom powder, optional
Method
1. Prepare the ingredients
Finely chop the garlic, ginger and banana shallots.
Beat the eggs and set aside.
Make sure the cooked jasmine rice is cooled before cooking.
2. Cook the aromatics
Heat 2 tbsp of oil in a wok over high heat.
Add the garlic, ginger and shallots.
Stir-fry for 2–3 minutes until fragrant and softened.
3. Cook the prawns
Add the prawns to the wok.
Stir-fry for 2–3 minutes, until the prawns are almost fully cooked.
4. Add the egg and rice
Reduce the heat to low and pour in the beaten eggs.
Stir-fry for approximately 20 seconds.
While the egg is still slightly runny, add the cooked jasmine rice.
Increase the heat and stir-fry for 2–3 minutes, breaking up any clumps of rice and mixing everything together.
5. Season the fried rice
Add the soy sauce, sesame oil, white pepper, oyster sauce and mushroom powder, if using.
Stir-fry until the seasonings are evenly distributed and the rice is hot.
6. Garnish and serve
Sprinkle over the chopped scallion and red chilli, if using.
Serve immediately while hot.
Notes
- Use cold rice: Cooked rice that has been cooled gives better texture and prevents the fried rice from becoming mushy.
- Keep the prawns tender: Avoid overcooking the prawns. They should be just cooked through before serving.
- Adjust the seasoning: Add soy sauce to taste, keeping in mind that the oyster sauce also adds saltiness.
- Add vegetables: Peas, carrots, sweetcorn or bean sprouts can be added for extra texture and colour.
- Make it spicy: Add extra fresh red chilli or a small amount of chilli oil.
