Ingredients
Yakisoba Sauce
- 1 tbsp Kikkoman Soy Sauce
- 3 tbsp tomato ketchup
- 4 tbsp water
- 3 tbsp Worcestershire sauce
- 1 tbsp sake or red wine
- 1 tsp sugar
Noodles and Vegetables
- 2 portions ramen or egg noodles
- 1 tsp rapeseed oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 thumb-sized piece of ginger, minced
- 1 large handful Savoy cabbage leaves
- 2 carrots, julienned
- 1 large handful bean sprouts
Method
1. Prepare the Yakisoba Sauce
Add the soy sauce, tomato ketchup, water, Worcestershire sauce, sake and sugar to a saucepan.
Stir well and bring to a gentle simmer.
Cook for approximately 10 minutes, stirring occasionally.
Remove from the heat and set aside.
2. Cook the Noodles
Cook the ramen or egg noodles according to the packet instructions.
Drain well and set aside.
3. Stir-Fry the Vegetables
Heat the rapeseed oil in a wok over medium-high heat.
Add the chopped onion and stir-fry until it begins to turn golden.
Add the minced ginger and garlic and stir-fry until fragrant.
Add the Savoy cabbage, carrots and bean sprouts.
Stir-fry until the vegetables begin to soften while retaining some of their texture.
4. Add the Noodles
Add the cooked noodles to the wok.
Toss everything together using tongs or a spatula.
Pour over the prepared Yakisoba sauce and stir-fry until the noodles and vegetables are evenly coated and heated through.
5. Serve
Divide between two bowls and serve immediately.
Notes
- Cook the noodles just until tender so they do not become too soft during the final stir-fry.
- Keep the vegetables slightly crisp for better texture.
- The sauce can be prepared in advance and refrigerated until needed.
- Chicken, pork, prawns or tofu can be added if you want to make this a more substantial meal.
