Ingredients

For the Spare Ribs

  • 700g spare ribs

For the Marinade

  • 3 tbsp Lee Kum Kee Premium Oyster Sauce
  • 1 tbsp Lee Kum Kee Premium Light Soy Sauce
  • 2 tbsp Lee Kum Kee Premium Dark Soy Sauce
  • 2 tbsp Lee Kum Kee Seasoned Rice Vinegar
  • 1 tbsp Shaoxing wine, or sherry
  • 2 tbsp honey
  • 2 tbsp cornflour
  • 2 cloves garlic, finely chopped
  • 15g fresh ginger, finely chopped or grated
  • A handful of sesame seeds

For the Asian Coleslaw

  • Shredded cabbage and carrots
  • Lee Kum Kee Pure Sesame Oil
  • Lee Kum Kee Sriracha Mayo
  • Sesame seeds, for garnish

Method

1. Marinate the spare ribs

Place the spare ribs in a large bowl or container.

Add the oyster sauce, light soy sauce, dark soy sauce, seasoned rice vinegar, Shaoxing wine, garlic, ginger, honey, cornflour and sesame seeds.

Mix thoroughly until the ribs are evenly coated.

Cover and refrigerate overnight to allow the flavours to develop.

2. Preheat the oven

Preheat the oven to 200°C / 180°C fan / Gas Mark 6.

3. Roast the ribs

Arrange the marinated spare ribs evenly on a baking tray.

Bake for approximately 40 minutes, or until the ribs are thoroughly cooked and caramelised.

4. Prepare the coleslaw

Combine the shredded cabbage and carrots in a bowl.

Add Lee Kum Kee Pure Sesame Oil and Sriracha Mayo to taste.

Mix well and set aside.

5. Serve

Serve the sweet and sour spare ribs hot with the Asian coleslaw on the side.

Garnish the coleslaw with sesame seeds before serving.

Notes

  • Marinate overnight: This gives the ribs more time to absorb the soy, oyster sauce, vinegar and honey.
  • Check the ribs: Cooking time can vary depending on the size and thickness of the ribs. Ensure they are thoroughly cooked before serving.
  • Balance the coleslaw: Adjust the sesame oil and Sriracha Mayo to your preferred level of richness and spice.
