Ingredients
For the Cha Han
- 185g boneless chicken thighs, diced
- 1 small carrot, diced
- 2 spring onions, finely sliced, with some reserved for garnish
- 80g sweetcorn kernels
- 50g mangetout, finely sliced
- 1 egg, beaten
- 250g cooked and cooled sushi rice
- 3 tbsp Japanese soy sauce
- 1 pinch salt
- 2 tbsp vegetable or peanut oil
Chicken Marinade
- 1 tbsp Japanese soy sauce
- 1 tbsp sake
- 1 tbsp mirin
- 2 tsp caster sugar
Method
1. Marinate the chicken
Place the diced chicken in a bowl.
Add the Japanese soy sauce, sake, mirin and caster sugar.
Mix well and leave to marinate for 15–20 minutes.
2. Stir-fry the chicken
Heat the oil in a wok over high heat.
Add the marinated chicken and stir-fry for approximately 4 minutes, until cooked through.
3. Add the vegetables
Add the carrot, mangetout, spring onion and sweetcorn.
Stir-fry for another 2 minutes, until the vegetables are slightly softened.
4. Add the egg and rice
Push the chicken and vegetables to one side of the wok.
Pour the beaten egg into the empty side and lightly scramble.
When the egg is still slightly runny, add the cooked and cooled sushi rice.
Stir-fry everything together for approximately 1 minute.
5. Season and serve
Add the Japanese soy sauce and a pinch of salt.
Mix thoroughly until the rice is evenly seasoned.
Serve immediately and garnish with the reserved spring onions.
