Ingredients
For the Noodles
- 2 bundles ramen noodles
- 1 tbsp vegetable oil
- 2 free-range eggs, whisked
- 2 mini cucumbers, julienned
- 2 heritage tomatoes, quartered
- 2 tbsp pickled shallots, beetroot, or cornichons
- 50g ham, cut into strips
- 6 crab sticks, shredded
- 2 tbsp crispy onions, for garnish
For the Dressing
- 4 tbsp seasoned soy sauce
- 1 tsp sesame oil
- 1 tsp Chiu Chow chilli oil
Method
1. Prepare the dressing
Add the seasoned soy sauce, sesame oil and Chiu Chow chilli oil to a small bowl.
Mix well until fully combined, then refrigerate until ready to use.
2. Cook the eggs
Heat ½ tbsp vegetable oil in a non-stick frying pan over medium heat.
Pour in the beaten eggs and cook gently to form a soft omelette.
Remove from the heat and allow the omelette to cool.
Slice into thin strips and set aside.
3. Prepare the noodles
Blanch the ramen noodles according to the packet instructions.
Drain and rinse thoroughly under cold water to remove excess starch and cool the noodles.
Toss the noodles with the remaining ½ tbsp vegetable oil to prevent them from sticking together.
Refrigerate for approximately 30 minutes, until thoroughly chilled.
4. Prepare the toppings
Julienne the mini cucumbers and quarter the heritage tomatoes.
Prepare the pickled shallots, beetroot or cornichons.
Cut the ham into strips and shred the crab sticks.
5. Assemble the bowls
Divide the chilled ramen noodles evenly between two serving bowls.
Arrange the cucumber, tomatoes, pickles, ham, crab sticks and sliced omelette neatly around the noodles.
6. Finish and serve
Drizzle the chilled sesame-soy dressing evenly over the noodles and toppings.
Garnish with crispy onions.
Serve immediately while cold.
