Tender Cantonese-style BBQ pork marinated in hoisin sauce, black bean and garlic sauce and sugar, then roasted or barbecued with honey until caramelised.
Serves: 4–6
Ingredients
For the Pork
- 1kg pork shoulder steak
For the Marinade
- 65g hoisin sauce
- 10g black bean and garlic sauce
- 115g sugar
- 10g salt
- 20ml water
For the Seasoning
- Honey, as needed
Method
1. Prepare the pork
Cut the pork shoulder steak into strips.
Wash and pat the pork dry.
2. Marinate the pork
Combine the hoisin sauce, black bean and garlic sauce, sugar, salt and water in a bowl.
Add the pork and coat thoroughly with the marinade.
Cover and refrigerate, preferably overnight, to allow the flavours to develop.
3. Bake the pork
Preheat the oven to 170°C.
Place the marinated pork on a baking tray and bake for 30 minutes.
4. Add the honey
Remove the pork from the oven and brush evenly with honey.
Return to the oven and bake for a further 10 minutes.
Brush with honey again and bake for another 10 minutes, or until the pork is thoroughly cooked and caramelised.
5. Cool and serve
Remove the pork from the oven and allow it to cool slightly before slicing and serving.
6. BBQ method
Alternatively, place the marinated pork on a hot barbecue.
Cook for approximately 8 minutes per side.
Brush the pork evenly with honey and return it to the barbecue for a further 2–3 minutes, until caramelised.
Allow the pork to cool slightly before slicing and serving.
