Ingredients

For the Stir-Fry

  • 200g fresh Chinese chives, cut into 7–8cm lengths
  • 200g fresh shrimp, peeled and deveined
  • 200g fresh squid, cleaned and cut into rings
  • 100g roasted cashews
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • Vegetable oil, for frying

For the Sauce

  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp rice wine
  • ½ tsp sesame oil
  • ¼ tsp red pepper flakes, optional

To Serve

  • Steamed rice or noodles

Method

1. Prepare the aromatics

Heat a wok or large frying pan over high heat.

Add a little vegetable oil.

Add the minced garlic and ginger and stir-fry briefly until fragrant.

2. Cook the seafood

Add the shrimp and squid to the wok.

Stir-fry until the seafood is cooked through.

Remove the shrimp and squid from the wok and set aside.

3. Stir-fry the chives and cashews

Add a little more oil to the wok if needed.

Add the Chinese chives and roasted cashews.

Stir-fry for approximately 30 seconds, until the chives turn bright green and the cashews are lightly toasted.

4. Combine and season

Return the cooked shrimp and squid to the wok.

Add the soy sauce, oyster sauce, rice wine, sesame oil and red pepper flakes, if using.

Stir-fry for approximately 30 seconds, until everything is evenly coated and heated through.

5. Serve

Transfer to serving plates.

Serve immediately with steamed rice or noodles.

Notes

  • Keep the seafood tender: Avoid overcooking the shrimp and squid, as they can become tough.
  • Make it spicy: Add extra red pepper flakes or a small amount of Szechuan peppercorns.
  • Seafood variations: Shrimp and squid can be replaced with scallops, fish fillets or other seafood.
  • For extra flavour: Serve with chilli oil or soy sauce on the side.
