Cook Time: 40 minutes
Total Time: About 3 hours 40 minutes
Difficulty: Easy
Dietary: Vegetarian
Ingredients
- 200g white glutinous rice
- 250ml coconut milk
- 3 tbsp sugar
- ½ tsp salt
- 2 fresh yellow mangoes, diced
- 50g mung beans
- A little oil, for toasting the mung beans
Method
1. Soak the glutinous rice
Rinse the glutinous rice several times until the water runs clear.
Soak the rice in water for 3 hours, or leave it to soak overnight. Make sure the water covers the rice by at least 5cm.
2. Steam the rice
Drain the rice through a sieve and transfer it to a bamboo steamer lined with greaseproof paper.
Steam for approximately 30 minutes, or until the rice is soft and fully cooked.
3. Prepare the coconut mixture
While the rice is steaming, gently heat the coconut milk, sugar and salt in a small saucepan for 2 to 3 minutes, until the sugar has dissolved. Do not boil.
4. Prepare the mung beans
Rinse the mung beans and place them in a small saucepan. Add enough water to cover and gently boil for approximately 5 minutes, until softened.
Drain the mung beans and pat them dry with a tea towel or kitchen paper.
Heat a little oil in a small frying pan. Toast the mung beans over low to medium heat for 4 to 5 minutes, until crispy. Set aside.
5. Prepare the mango
Cut the mango flesh into cubes and set aside.
6. Combine the rice and coconut mixture
Once the sticky rice is cooked, transfer it to a bowl. Pour approximately two-thirds of the coconut mixture over the rice and mix gently.
7. Serve
Serve the coconut sticky rice with the diced mango.
Pour the remaining coconut mixture over the rice and garnish with the crispy mung beans.
Serve immediately.
Notes
- Soaking the glutinous rice is important for achieving a soft, evenly cooked texture.
- Keep the coconut milk mixture warm rather than boiling it.
- Allow the cooked rice to absorb the coconut mixture for a few minutes before serving for a richer flavour.
- Use ripe mangoes for the best sweetness and texture.
- The crispy mung beans add a useful contrast to the soft sticky rice.
