- 2 eggs
- 2 tbsp sunflower oil, divided
- 1 tbsp fish sauce
- 1 tbsp light soy sauce
- Juice of ½ lime

Method
1. Prepare the ingredients
Finely chop the onion, spring onions and garlic.
Slice the chicken fillet into thin pieces.
Make sure the cooked jasmine rice has cooled completely before cooking.
2. Cook the chicken
Heat 1 tbsp sunflower oil in a wok or large frying pan over medium heat.
Add the chopped onion and garlic.
Sauté until the onion becomes slightly translucent.
Add the sliced chicken and stir-fry for approximately 2 minutes, until almost cooked through.
3. Add the rice
Increase the heat to high.
Add the cooled cooked rice and stir-fry for approximately 30 seconds.
Add the fish sauce, light soy sauce, white pepper and lime juice.
Toss everything together until well combined.
Transfer the fried rice to a bowl or plate and set aside.
4. Cook the eggs
Heat the remaining 1 tbsp sunflower oil in the same pan over high heat.
Add the eggs and scramble until they are almost fully cooked.
5. Combine everything
Return the fried rice to the pan with the scrambled eggs.
Add the chopped spring onions.
Stir-fry everything together until the egg is fully cooked and the rice is hot.
6. Serve
Transfer the Khao Pad Gai to serving bowls and serve immediately.
Add an extra squeeze of fresh lime before serving if desired.
