Ingredients
- 450g Pancit Bihon rice noodles
- ½ tbsp minced garlic, or fresh garlic
- 225g pork belly, thinly sliced
- 225g cooked boneless chicken thigh or breast, thinly sliced
- 1 Knorr chicken broth cube or 1 tbsp chicken powder
- 5 tbsp light soy sauce
- 60g peas
- 150g carrot, thinly sliced
- ½ medium cabbage, finely chopped
- 100g celery, finely chopped (approximately 3 stalks)
- 1 small onion, finely chopped
- 800ml water
- Oil, for cooking
Method
1. Sauté the aromatics
Heat a little oil in a large frying pan or wok over high heat.
Add the minced garlic and chopped onion.
Sauté until fragrant and slightly softened.
2. Cook the pork and chicken
Add the thinly sliced pork belly and cooked chicken to the wok.
Stir-fry for approximately 2 minutes, allowing the pork to begin cooking and the chicken to heat through.
3. Make the broth
Add the chicken broth cube and pour in the 800ml water.
Reduce the heat to low and simmer for 15 minutes.
While the broth is simmering, place the Pancit Bihon noodles in a separate bowl of water and soak for 10 minutes, or according to the packet instructions.
4. Add the vegetables
Add the carrots, peas, cabbage and celery to the wok.
Simmer for another 5 minutes, until the vegetables are tender but still have some texture.
5. Remove the meat and vegetables
Using a slotted spoon or skimmer, remove the meat and vegetables from the wok.
Place them in a separate bowl, leaving the broth in the wok.
6. Season the broth
Add the light soy sauce to the broth.
Stir well to combine.
7. Cook the noodles
Drain the soaked Pancit Bihon noodles and add them to the simmering broth.
Gently toss the noodles through the liquid and cook until the broth has been completely absorbed.
8. Combine everything
Return the cooked meat and vegetables to the wok.
Gently mix everything together and simmer for approximately 2 minutes, allowing the flavours to combine.
9. Serve
Transfer the Pancit Bihon Guisado to serving plates and serve immediately.
Notes
- Don't over-soak the noodles: Follow the soaking time carefully so the rice noodles don't become too soft before cooking.
- Keep some texture: Avoid overcooking the vegetables so they retain a little crunch.
- Let the noodles absorb the broth: The noodles should absorb the seasoned liquid completely rather than being drained after cooking.
- Use cooked chicken: Since the chicken is already cooked, it only needs to be heated through with the pork and broth.
- Adjust the seasoning: Taste the broth before adding the noodles. The soy sauce and chicken broth cube provide most of the seasoning.
