Ingredients

  • 6 large croissants
  • 6 eggs
  • Kimchi, as needed
  • Sliced ham, chopped
  • Grated orange cheddar cheese
  • Nori seaweed furikake, for topping

Method

1. Prepare the croissants

Preheat the oven to 180°C.

Slice each croissant in half.

Place the croissant halves into a muffin tin or baking tray and gently press down the centre to create a cup shape.

2. Add the kimchi and ham

Spoon some kimchi into the bottom of each croissant cup.

Top with the chopped ham, spreading it evenly between the cups.

3. Add the eggs

Carefully crack one egg into each croissant cup.

Make sure the egg sits securely inside the pastry.

4. Add the cheese

Generously sprinkle the grated cheddar cheese over each croissant cup.

5. Add the furikake and bake

Sprinkle each cup with nori seaweed furikake.

Place in the oven and bake for approximately 20 minutes, or until the eggs are set and the cheese is melted and golden.

6. Serve

Remove from the oven and allow the croissant cups to cool for a few minutes.

Serve warm for breakfast, brunch or as part of a savoury breakfast spread.

Notes

  • Adjust the kimchi: Add more or less kimchi depending on how spicy and tangy you want the croissant cups to be.
  • Check the eggs: Cooking time can vary depending on the size of the eggs and how well done you prefer the yolks.
  • Use different cheese: Cheddar can be replaced with mozzarella, Gruyère or another good melting cheese.
  • Make them vegetarian: Leave out the ham and add extra kimchi or vegetables instead.
  • For extra flavour: Add a little more nori furikake just before serving.
