Prep Time: 10 minutes
Cooking Time: 20 minutes
Total Time: 30 minutes
Serves: 2
Cuisine: Korean
Course: Main Course

Ingredients:

Main Ingredients

  • 1 can (160g) Canned Kimchi
  • 200g pork, thinly sliced
  • 120g Nongshim Shin Ramyun Noodles
  • 4 shiitake mushrooms, thinly sliced
  • ½ bag enoki mushrooms, rinsed, separated and trimmed
  • 225g firm or soft tofu, thickly sliced or cut into 2-inch cubes
  • ½ napa cabbage, washed and cut into 2–3 equal pieces
  • A handful of bean sprouts
  • 240ml hot water
  • 1 tsp sesame oil

Seasonings

  • ¼ tsp salt, or to taste
  • ¼ tsp sugar, or to taste
  • ¼ tsp sesame oil, or to taste
  • 1 packet Nongshim Shin Ramyun soup base
  • Kimchi juice from the can, to taste

Method

1. Cook the pork

Heat oil in a medium saucepan over medium-high heat. Add the thinly sliced pork and stir-fry until lightly browned.

2. Add the kimchi

Add the kimchi, reserving the kimchi juice for later. Stir-fry until fragrant.

3. Add the vegetables

Add the shiitake and enoki mushrooms, followed by enough hot water to just cover the kimchi and mushrooms. Bring to a boil.

4. Add the noodles

Add the Shin Ramyun noodles, soup base and reserved kimchi juice. Reduce the heat to medium-low and cook until the noodles are halfway softened.

5. Add the tofu and bean sprouts

Add the tofu and bean sprouts. Stir occasionally and cook for another minute.

6. Season

Season with sesame oil, sugar and salt to taste.

7. Serve

Serve hot and enjoy.

Notes

  • Adjust the spice: Use a different Korean noodle variety to change the heat level. For a milder version, choose a mild Korean noodle.
  • Use your favourite noodles: Shin Ramyun can be replaced with other Korean noodles such as seafood or spicy noodle varieties.
  • Kimchi juice: Adding the juice from the kimchi gives the broth extra flavour and acidity, so adjust the amount according to taste.
  • Make it your own: Add extra mushrooms, tofu, bean sprouts or napa cabbage for a more substantial bowl.
  • One-pot meal: Everything cooks in the same saucepan, making this an easy and satisfying weeknight dinner.
