Ingredients

  • 200g dried spaghetti
  • 25g butter
  • 4 cloves garlic, finely chopped
  • 3 tbsp oyster sauce
  • 30g Parmesan cheese, grated
  • Salt, for the pasta water
  • Vegetable oil, for the pasta water

To Garnish

  • Spring onions, chopped
  • Fresh red chilli, chopped
  • Chilli oil

Method

1. Cook the spaghetti

Bring a large pot of water to a boil.

Add a little salt and oil, then add the spaghetti.

Cook according to the packet instructions, or until al dente.

Reserve a little pasta water, then drain the spaghetti.

2. Cook the garlic butter

Heat a large frying pan or wok over medium heat.

Add the butter and chopped garlic.

Cook for 1–2 minutes, stirring regularly, until the garlic becomes fragrant.

Be careful not to let the garlic burn.

3. Add the spaghetti and sauce

Add the drained spaghetti to the pan.

Pour in the oyster sauce and sprinkle over the grated Parmesan.

Reduce the heat to low and toss everything together until the cheese has melted and the spaghetti is evenly coated.

If the sauce is too thick, add a small splash of the reserved pasta water.

4. Garnish and serve

Transfer the spaghetti to serving bowls.

Garnish with chopped spring onions and fresh red chilli.

Drizzle with chilli oil and serve immediately.

Notes

  • Don't burn the garlic: Cook it gently over medium heat. Burnt garlic can make the dish bitter.
  • Use pasta water: A small splash can loosen the sauce and help it coat the spaghetti.
  • Adjust the heat: Leave out the fresh chilli or chilli oil for a milder dish.
  • Serve immediately: The pasta is best served while the sauce is warm and creamy.
