Ingredients
For the Soup
- 2 tbsp cooking oil
- 4–5 slices fresh ginger
- 2 spring onions, cut into 5cm pieces
- 2 heads pak choi, separated into leaves
- 8–10 thin slices beef
- 8–10 beef meatballs
- 380g konjac or shirataki noodles
For the Soup Stock
- 500ml water
- 2 tbsp oyster sauce
- 1 tbsp chilli bean paste
To Garnish
- 8–10 spring onions, thinly sliced
- 1 tbsp chilli oil, or more to taste
Method
1. Fry the aromatics
Heat the cooking oil in a large frying pan or shallow saucepan over medium heat.
Add the ginger and spring onion pieces.
Stir-fry for approximately 2 minutes, until fragrant.
2. Cook the pak choi
Add the pak choi leaves and stir-fry for approximately 3 minutes, until slightly softened.
3. Prepare the soup stock
In a jug or bowl, mix the oyster sauce and chilli bean paste until smooth.
Add 500ml water and stir well until the sauces are fully dissolved.
4. Add the stock
Pour the prepared stock into the pan with the vegetables.
Stir well and bring the soup to a gentle boil.
5. Add the beef
Once the soup is boiling, add the beef meatballs and thinly sliced beef.
Cook until the beef is almost fully cooked.
6. Add the konjac noodles
Rinse the konjac noodles thoroughly under cold water.
If using knotted konjac noodles, loosen the knots before adding them to the soup.
Add the noodles to the pan.
Bring the soup back to a boil and cook for 2 minutes.
Reduce the heat and simmer for another 2 minutes, or until the beef is fully cooked.
7. Serve
Taste the soup and adjust the seasoning if needed.
Ladle into bowls and garnish generously with sliced spring onions.
Drizzle with chilli oil and serve hot.
Notes
- Rinse konjac noodles well: They can have a distinctive smell when first opened. Thorough rinsing helps remove it.
- Make it spicier: Add extra chilli bean paste, chilli oil or dried chilli flakes.
- Use a richer broth: Replace half of the water with beef stock for a deeper flavour.
- Change the protein: Beef can be replaced with chicken, pork or tofu.
- Add more vegetables: Mushrooms, cabbage or bean sprouts also work well in this soup.
