Ingredients

  • 2 cups cooked rice, cooled
  • 2 large eggs, beaten
  • 200g boneless, skinless chicken breast, diced
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 carrots, shredded
  • 2 stalks celery, chopped
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • Salt and pepper, to taste
  • Vegetable oil, for frying

Method

1. Stir-fry the vegetables

Heat a wok or large frying pan over medium-high heat.

Add a little vegetable oil, followed by the minced garlic, chopped onion, shredded carrots and celery.

Stir-fry until the vegetables have softened and the garlic is fragrant.

2. Cook the chicken

Add the diced chicken to the wok.

Stir-fry until the chicken is browned and cooked through.

3. Cook the eggs

Push the chicken and vegetables to one side of the wok.

Add a little more oil to the empty side, then pour in the beaten eggs.

Scramble the eggs quickly until just cooked.

4. Add the rice

Add the cooled cooked rice to the wok.

Stir-fry and mix everything together, breaking up any large clumps of rice.

5. Season the fried rice

Add the soy sauce, oyster sauce and sesame oil.

Season with salt and pepper to taste.

Stir-fry for a few minutes until everything is evenly coated and heated through.

6. Serve

Transfer the chicken egg fried rice to serving bowls and serve immediately while hot.

Notes

  • Use cold rice: Leftover, chilled rice works particularly well because it is drier and less likely to become sticky during stir-frying.
  • Don't overcrowd the wok: Cook in batches if necessary so the ingredients fry rather than steam.
  • Add more vegetables: Peas, sweetcorn, bean sprouts or other vegetables can be added to the fried rice.
  • Adjust the flavour: Add chilli sauce or sriracha for extra heat.
  • Cook the chicken thoroughly: Make sure the chicken is fully cooked before serving.
