Stir-Fried Chinese Chive with Shrimp, Squid, and Cashews Recipe

A flavourful and satisfying dish!

Ingredients:

• 200g fresh Chinese chives, cut into 3-inch lengths
• 200g fresh shrimp, peeled and deveined
• 200g fresh squid, cleaned and cut into rings
• 100g cashews, roasted
• 2 cloves garlic, minced
• 1 tablespoon ginger, minced
• 2 tablespoons soy sauce
• 1 tablespoon oyster sauce
• 1 teaspoon rice wine
• 1/2 teaspoon sesame oil
• 1/4 teaspoon red pepper flakes (optional)
• Vegetable oil for frying

Instructions:

1. Prep the Ingredients: Heat a wok or large skillet over high heat. Add a little vegetable oil and stir-fry the garlic and ginger until fragrant.
2. Cook the Seafood: Add the shrimp and squid to the wok and stir-fry until cooked through. Remove from the wok and set aside.
3. Stir-Fry the Chives and Cashews: Add a little more oil to the wok and stir-fry the Chinese chives and cashews for 30 seconds, or until the chives turn bright green and the cashews are slightly toasted.
4. Combine and Season: Return the cooked seafood to the wok and add the soy sauce, oyster sauce, rice wine, sesame oil, and red pepper flakes. Stir-fry for another 30 seconds until well combined.
5. Serve: Serve immediately with steamed rice or noodles.

Tips:

• For a spicier dish, add more red pepper flakes or a pinch of Szechuan peppercorns.
• You can substitute the shrimp and squid with other seafood, such as scallops or fish fillets.
• Serve with a side of chili oil or soy sauce for dipping.
