Recipes
1. Radish Kimchi (Kkakdugi)
Ingredients :
1 kg FRESH Long White Radish
3 green onions, chopped
2 tablespoons salt
3 tablespoons brown sugar
1 tablespoon red chili flakes
1 tablespoon minced garlic
1 tablespoon minced ginger
1 tablespoon rice flour
½ cup water
Instructions :
Peel and cut the radish into small cubes.
Mix the radish cubes with salt and sugar, and let sit for 1 hour.
Rinse the radish cubes with cold water and drain.
In a small pot, mix rice flour with water and cook until it thickens into a porridge. Let it cool.
Combine the cooled porridge with chili flakes, garlic, ginger, and green onions.
Mix the radish cubes with the seasoning paste.
Transfer to a glass jar and let it ferment at room temperature for 24 hours, then refrigerate .
2. Pickled Radish
Ingredients :
500g FRESH Long White Radish
1 cup water
1 cup apple cider vinegar
1 cup sugar
1 teaspoon salt
5 cloves
2 bay leaves
1 cinnamon stick
Instructions :
Peel and slice the radish into thin rounds.
In a saucepan, combine water, vinegar, sugar, salt, cloves, bay leaves, and cinnamon stick. Bring to a boil.
Place the radish slices in a jar and pour the hot pickling liquid over them.
Let it cool to room temperature, then refrigerate for at least 1 hour before serving .
3. White Radish Soup
Ingredients :
1 kg FRESH Long White Radish, sliced
6 cups chicken or vegetable broth
1 onion, chopped
2 cloves garlic, minced
1 tablespoon soy sauce
1 teaspoon sesame oil
Salt and pepper to taste
Chopped green onions for garnish
Instructions :
In a pot, sauté onion and garlic in sesame oil until fragrant.
Add the sliced radish and cook for 2-3 minutes.
Pour in the broth and bring to a boil. Reduce heat and simmer for 20-30 minutes until the radish is tender.
Season with soy sauce, salt, and pepper.
Garnish with chopped green onions before serving .
