Ingredients (Serves 4):

    • 1 medium onion, thinly sliced
    • 1 red bell pepper, thinly sliced
    • 1 yellow bell pepper, thinly sliced
    • 2 cloves garlic, minced
    • 1-inch piece ginger, minced
    • 100 grams snap peas
    • 2 tbsp sesame oil

Instructions:

  1. Prepare the Tofu:

    • In a bowl, toss the tofu cubes with cornstarch until evenly coated.
    • Heat vegetable oil in a large skillet over medium-high heat.
    • Add the tofu cubes and cook until golden brown and crispy on all sides, about 8-10 minutes. Remove from the skillet and set aside.
  2. Make the Sauce:

    • In a small bowl, whisk together gochujang, soy sauce, rice vinegar, honey (or maple syrup), sesame seeds, and water. Set aside.
  3. Stir-Fry the Vegetables:

    • In the same skillet, heat sesame oil over medium-high heat.
    • Add the onion, red bell pepper, yellow bell pepper, garlic, and ginger. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
    • Add the snap peas and stir-fry for another 2 minutes.
  4. Combine and Serve:

    • Return the crispy tofu to the skillet.
    • Pour the sauce over the tofu and vegetables, stirring to coat everything evenly.
    • Cook for an additional 2-3 minutes until the sauce thickens slightly.
    • Garnish with chopped green onions and sesame seeds before serving.
