Ingredients (Serves 4):

Tofu:
- 400 grams firm tofu, drained and cubed
- 2 tbsp vegetable oil
- 1 tbsp cornstarch

Stir-Fry:
- 1 medium onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1-inch piece ginger, minced
- 100 grams snap peas
- 2 tbsp sesame oil

Sauce:
- 3 tbsp gochujang (Korean chili paste)
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 tsp sesame seeds
- 2 tbsp water

Garnish:
- 2 green onions, chopped
- 1 tsp sesame seeds
Instructions:

Prepare the Tofu:
- In a bowl, toss the tofu cubes with cornstarch until evenly coated.
- Heat vegetable oil in a large skillet over medium-high heat.
- Add the tofu cubes and cook until golden brown and crispy on all sides, about 8-10 minutes. Remove from the skillet and set aside.

Make the Sauce:
- In a small bowl, whisk together gochujang, soy sauce, rice vinegar, honey (or maple syrup), sesame seeds, and water. Set aside.

Stir-Fry the Vegetables:
- In the same skillet, heat sesame oil over medium-high heat.
- Add the onion, red bell pepper, yellow bell pepper, garlic, and ginger. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
- Add the snap peas and stir-fry for another 2 minutes.

Combine and Serve:
- Return the crispy tofu to the skillet.
- Pour the sauce over the tofu and vegetables, stirring to coat everything evenly.
- Cook for an additional 2-3 minutes until the sauce thickens slightly.
- Garnish with chopped green onions and sesame seeds before serving.
