Chicken Egg Fried Rice Recipe

Ingredients:

• 2 cups cooked rice, cooled
• 2 large eggs, beaten
• 200g boneless, skinless chicken breast, diced
• 2 cloves garlic, minced
• 1 onion, chopped
• 2 carrots, shredded
• 2 stalks celery, chopped
• 2 tablespoons soy sauce
• 1 tablespoon oyster sauce
• 1 teaspoon sesame oil
• Salt and pepper to taste
• Vegetable oil for frying

Equipment:

• Large wok or frying pan
• Spatula

Instructions:

1. Prep the Vegetables: Heat a wok or large frying pan over medium-high heat. Add a little vegetable oil and stir-fry the garlic, onion, carrots, and celery until softened.
2. Cook the Chicken: Add the diced chicken to the wok and cook until browned.
3. Add the Rice: Push the chicken and vegetables to the side of the wok and add a little more oil. Pour in the beaten eggs and scramble them quickly.
4. Combine Ingredients: Add the cooked rice to the wok and mix with the eggs, chicken, and vegetables.
5. Season and Serve: Season with soy sauce, oyster sauce, sesame oil, salt, and pepper. Stir-fry until well combined and heated through. Serve immediately.

• For a richer flavour, use leftover fried rice.
