Method

  1. Cook udon noodles. Boil udon noodles according to package instructions (usually 2-3 mins for fresh/straight-to-wok). Drain and set aside.
  2. Heat 1 tbsp oil in a large pan over medium-high heat. Add sausage and cook, breaking it up, until browned and slightly caramelised (5-6 mins). Remove and set aside.
  3. In the same pan, add 1 tbsp oil and butter. Sauté garlic, shallots, and scallions until fragrant.
  4. Melt butter, then add cooked udon noodles.
  5. Lower heat to medium. Add gochujang, soy sauce, and cream, stirring to combine. Coat the cooked udon noodles evenly. Let simmer for 1-2 mins until sauce clings to noodles.
  6. Return sausage to the pan. Add scallions and sprinkle with ½ cup grated parmesan cheese, stirring until melted.
  7. Twirl noodles into bowls. Top with a final sprinkle of sesame seeds.
