
Spicy Sausage Gochujang Udon Noodle

Ingredients
- 2 packets (400g) udon noodles
- 200g sausage (spicy for extra kick!)
- 2 tbsp gochujang (Korean red pepper paste)
- 2 tbsp oil
- 1 tbsp butter
- 50ml cream
- 2 tbsp light soy sauce
- 2 garlic cloves, minced
- ½ cup chopped shallot
- 2 scallions (chopped)
- 1 cup grated parmesan cheese
- 1 tsp toasted sesame seeds

Method
- Cook udon noodles. Boil udon noodles according to package instructions (usually 2-3 mins for fresh/straight-to-wok). Drain and set aside.
- Heat 1 tbsp oil in a large pan over medium-high heat. Add sausage and cook, breaking it up, until browned and slightly caramelised (5-6 mins). Remove and set aside.
- In the same pan, add 1 tbsp oil and butter. Sauté garlic, shallots, and scallions until fragrant.
- Melt butter, then add cooked udon noodles.
- Lower heat to medium. Add gochujang, soy sauce, and cream, stirring to combine. Coat the cooked udon noodles evenly. Let simmer for 1-2 mins until sauce clings to noodles.
- Return sausage to the pan. Add scallions and sprinkle with ½ cup grated parmesan cheese, stirring until melted.
- Twirl noodles into bowls. Top with a final sprinkle of sesame seeds.
