  • ¼ cup coconut cream (the solid part from a chilled can of coconut milk)

  • 2 teaspoons powdered sugar (or a sweetener of your choice, like agave syrup or maple syrup)

  • 1 teaspoon high-quality matcha powder (plus a pinch more for garnish)
Recommended: Try Uji Matcha Powder or Premium Matcha Powder from Asia Market

  • 1½ cups unsweetened normal/plant-based milk (oat, almond, or coconut milk)
Tip: Coconut milk makes it extra rich, while oat milk gives a smooth, balanced texture

What is Dalgona?

Dalgona refers to a whipped, frothy topping that went viral during the lockdown era — typically made with instant coffee. This matcha twist offers a caffeine boost without the jitters, using vibrant green tea powder for a smooth, earthy flavour.

Ingredient Spotlight

Matcha Powder
Matcha is a finely ground powder made from specially grown and processed green tea leaves. It’s rich in antioxidants (especially catechins), provides a calm alertness thanks to L-theanine, and adds a slightly grassy, umami depth to drinks.

Coconut Cream
When you refrigerate canned coconut milk, the top solid layer is coconut cream — thick, rich, and perfect for whipping. Choose full-fat coconut milk for the best results.

Instructions

Step 1: Prepare the Coconut Cream
Place a can of full-fat coconut milk in the fridge overnight. Carefully scoop out the solidified cream into a mixing bowl, avoiding the liquid at the bottom.

Step 2: Whip It Up
Using a hand mixer or stand mixer, whip the coconut cream on high speed for 3 to 4 minutes until it becomes fluffy and light.

Step 3: Add Matcha and Sweetener
Sift in the matcha powder and powdered sugar to avoid clumps. Whip again for another 2 to 3 minutes until smooth and well combined. You should get a light, airy consistency similar to whipped cream.

Step 4: Assemble the Drink
Fill two glasses with ice cubes. Pour about ¾ cup of your chosen plant-based milk into each glass.

Step 5: Top and Garnish
Gently spoon the whipped matcha mixture over the milk. Sprinkle a tiny pinch of matcha powder on top for an elegant garnish.

Step 6: Serve
Serve with a straw or stir gently before sipping to combine the creamy top with the milk below.

Tips and Variations

  • Make it a latte: Warm the milk before pouring for a cosy, hot version of this drink.

  • Add vanilla: A dash of vanilla extract adds a dessert-like depth.

  • Protein boost: Add a half scoop of unflavoured or matcha-flavoured vegan protein to the milk.

  • Sweetness swap: Maple syrup, coconut sugar, or monk fruit sweetener all work well as alternatives.

  • Try different matcha: Ceremonial grade for a smoother taste, culinary grade for a stronger flavour profile.
