Fresh eddoes are a close relative of taro root vegetables. They look smaller in appearance comparing to taro roots. But, in cuisines, they often used interchangeably. Eddoes and taros are part of ‘Colocasia’ genus, the former one is called ‘Colocasia antiquorum’, and the later is known by the name ‘Colocasia esculenta’. Because of the similarity in appearance, eddoes are called ‘baby taro’.
